Directions:

  1. Line a greased 15x10x1 inch baking pan with parchment paper. Grease the paper and set aside.
  2. In a heavy saucepan, combine the sugar, corn syrup, water, vanilla extract, and salt. Heat over medium heat, stirring constantly, until the sugar dissolves.
  3. Add 2 tablespoons of butter to the mixture and continue to stir until the butter melts.
  4. Raise the heat to medium-high and continue to cook the mixture, without stirring, until it reaches 300 degrees F (149 degrees C). Immediately remove from the heat.
  5. Add the milk chocolate chips and 1 tablespoon of butter to the mixture and stir until the chocolate chips are melted and the mixture is smooth.
  6. Stir in the chopped nuts and pour into the prepared pan. Cool completely before cutting into squares. Enjoy!

  • 2 lemons, juiced
  • Red food coloring

  1. Sift the confectioners’ sugar, cornflour, cream of tartar, and rosewater essence into a large bowl.
  2. Gradually add the caster sugar, 1 tablespoon (15 ml) at a time, until all of the sugar is incorporated and the mixture is smooth.
  3. Add the lemon juice and food coloring, and mix well.
  4. Pour the mixture into a large saucepan over medium heat. Cook for 10 minutes, stirring constantly, or until the mixture thickens and comes to a boil.
  5. Remove from the heat and let cool slightly. Pour into a greased and floured cake tin. Let cool completely before cutting into squares. Dust with confectioners’ sugar before serving.
