thinly sliced red onions

white vinegar

granulated sugar

kosher salt

whole black peppercorns

coriander seeds
Instructions
Place the onions in a large bowl and set aside.
In a small saucepan, combine the vinegar, sugar, salt, peppercorns and coriander seeds. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low and simmer for 5 minutes.
Pour hot liquid over the onions in the bowl and let sit at room temperature until cool (about 30 minutes).
Transfer onions with their liquid to an airtight container or jar and store in the refrigerator for up to 2 weeks. Enjoy!
