Ingredients
  

  • 4 cups thinly sliced red onions
  • 1 cup white vinegar
  • 1/2 cup granulated sugar
  • 2 teaspoons kosher salt
  • 2 teaspoons whole black peppercorns
  • 1 teaspoon coriander seeds

Instructions
 

  • Place the onions in a large bowl and set aside.
  • In a small saucepan, combine the vinegar, sugar, salt, peppercorns and coriander seeds. Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and simmer for 5 minutes.
  • Pour hot liquid over the onions in the bowl and let sit at room temperature until cool (about 30 minutes).
  • Transfer onions with their liquid to an airtight container or jar and store in the refrigerator for up to 2 weeks. Enjoy!
