Put some salt and pepper on the salmon. In a sizable ovenproof skillet, heat the olive oil over high heat. Cook the salmon in the pan for 2 minutes, or until it has browned.
Remove pan from heat. Place lemon quarters around salmon. Bake for 12 minutes or until fish is cooked through.
Remove from oven; let rest for 5 minutes. Serve with lemon wedges, if desired.

This recipe can also be made with other types of fish, such as tuna or halibut.
