In a medium saucepan, combine the heavy cream, sugar, and vanilla extract. Heat over medium heat until the mixture begins to bubble. Reduce the heat to low and continue cooking for 5 minutes or until it thickens slightly.
Turn off the heat and add in the diced dragon fruit pieces. Stir until everything is combined then set aside to cool completely. Once cooled, cover with plastic wrap and place in the refrigerator for at least 4 hours or overnight to chill completely before churning into ice cream.
Churn the chilled mixture in an ice cream maker according to manufacturer’s instructions. When finished, transfer to a freezer-safe container and freeze for at least 4 hours or overnight until firm.
