Ingredients
  

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas mashed
  • 3/4 cup granulated sugar
  • 1/3 cup butter or margarine melted
  • 1 egg slightly beaten
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with cooking spray and set aside.
  • In a medium bowl, sift together the flour, baking soda, and salt and set aside.
  • In a separate large bowl, beat together the banana, sugar, butter, egg, and vanilla extract until well combined.
  • Add the dry ingredients to the wet mixture and whisk together until just incorporated.
  • Pour batter into the prepared loaf pan and bake in preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in pan for 15 minutes before turning out onto a cooling rack to cool completely before slicing.

Notes

Delicious served warm and topped with your favorite cream cheese spread.
