Instructions
Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with cooking spray and set aside.
In a medium bowl, sift together the flour, baking soda, and salt and set aside.
In a separate large bowl, beat together the banana, sugar, butter, egg, and vanilla extract until well combined.
Add the dry ingredients to the wet mixture and whisk together until just incorporated.
Pour batter into the prepared loaf pan and bake in preheated oven for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in pan for 15 minutes before turning out onto a cooling rack to cool completely before slicing.
Notes
Delicious served warm and topped with your favorite cream cheese spread.
