Jack Stack Cheesy Potato Bake

Equipment

  • 8x8 inch baking dish
  • Mixing bowl
  • Whisk or spoon for mixing ingredients
  • Spatula for stirring bacon bits in at the end.

Ingredients
  

  • 2 pounds of potatoes cubed
  • 1 cup shredded cheese cheddar or a mix of your favorite cheeses
  • 1/3 cup mayonnaise
  • 2 tablespoons garlic-chipotle mayonnaise or regular mayo with a pinch of chipotle powder
  • 3 strips of bacon cooked and chopped into bits
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • Place the cubed potatoes in the prepared baking dish. Sprinkle with salt and pepper to taste. Top with shredded cheese, mayonnaise and garlic-chipotle mayonnaise. Mix until all ingredients are evenly distributed.
  • Bake in preheated oven for 25 minutes, or until potatoes are cooked through and cheese is melted and bubbly.
  • Top with bacon bits before serving. Enjoy!

Notes

For a twist on this classic recipe, you can add other toppings of your choice such as green onion, jalapeño peppers or diced tomatoes.
