Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter room temperature
  • 1 1/4 cups granulated sugar
  • 3 large eggs room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup Ciroc Red Berry Vodka
  • 8 ounces cream cheese softened
  • 4 tablespoons unsalted butter softened
  • 2 cups powdered sugar
  • 3 tablespoons Ciroc Red Berry Vodka

Instructions
 

  • Preheat oven to 350°F and line a 12 cavity muffin tin with paper liners. In a medium mixing bowl, whisk together the flour, baking powder and salt. Set aside.
  • Using an electric mixer, beat butter until creamy. Add sugar and beat until light in color. Beat in eggs one at a time followed by the vanilla extract and Ciroc Red Berry Vodka.
  • With the mixer on low speed, gradually add dry ingredients to wet ingredients until just combined. Do not overmix.
  • Fill each muffin cup two thirds full with batter then bake for 18-22 minutes or until a toothpick inserted into center of cupcake comes out clean. Let cool completely before frosting.
  • To make frosting: using an electric mixer beat cream cheese and butter for 2 minutes on medium-high speed. Gradually add powdered sugar and Ciroc Red Berry Vodka. Beat until light and fluffy, about 3 minutes.
  • Frost cupcakes as desired with prepared frosting and enjoy!
