Pappadeaux Seafood Dirty Rice

Equipment

  • Fork for fluffing the rice.

Ingredients
  

  • 1 cup white rice
  • 3 tablespoons olive oil
  • 1/4 cup diced celery
  • 1/4 cup diced red pepper
  • 2 cloves garlic minced
  • 2 tablespoons finely chopped green onions
  • 1/2 teaspoon salt
  • 1 teaspoon ground thyme
  • 1/4 teaspoon freshly ground black pepper

Instructions
 

  • In a large saucepan, heat the olive oil over medium heat. Add the celery, red peppers, garlic, and green onion; sauté for about 4 minutes until vegetables are soft.
  • Add in the rice and seasonings and stir to combine. Cook for an additional 3 minutes until fragrant.
  • Add 3 cups of water to the pot and bring to a boil. Once boiling, reduce the heat to low and cover with a tight-fitting lid. Simmer for 20 minutes until all the liquid is absorbed.
  • Remove from heat and fluff with a fork before serving.
  • Serve hot, topped with jumbo shrimp or crawfish if desired! Enjoy!

Notes

For a spicier version, add 1 teaspoon of cayenne pepper to the recipe.
For more seafood flavor, substitute chicken broth for the water.
