Ingredients
  

  • 12 large Portobello mushrooms cleaned and stems removed
  • 1/2 cup dry bread crumbs
  • 2 tablespoons finely chopped garlic
  • 2 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese
  • 2 teaspoons dried oregano leaves
  • 2 tablespoons freshly chopped parsley
  • Salt and black pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil.
  • Mix together the breadcrumbs, garlic, olive oil, Parmesan cheese, oregano leaves, parsley, salt and pepper in a medium bowl until well combined.
  • Place the mushrooms, gill-side up, onto the prepared baking sheet. Divide the stuffing evenly among the mushrooms, pressing lightly to make sure it sticks.
  • Bake in preheated oven for 20 minutes or until golden brown and cooked through. Serve warm or at room temperature. Enjoy!
