12large Portobello mushroomscleaned and stems removed
1/2cupdry bread crumbs
2tablespoonsfinely chopped garlic
2tablespoonsolive oil
3tablespoonsgrated Parmesan cheese
2teaspoonsdried oregano leaves
2tablespoonsfreshly chopped parsley
Salt and black pepper to taste
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or aluminum foil.
Mix together the breadcrumbs, garlic, olive oil, Parmesan cheese, oregano leaves, parsley, salt and pepper in a medium bowl until well combined.
Place the mushrooms, gill-side up, onto the prepared baking sheet. Divide the stuffing evenly among the mushrooms, pressing lightly to make sure it sticks.
Bake in preheated oven for 20 minutes or until golden brown and cooked through. Serve warm or at room temperature. Enjoy!
