Preheat oven to 350 degrees F (175 degrees C). Grease an 8 inch springform pan.
In a medium bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time and blend in flour, vanilla extract, lemon zest, and salt. Stir in the crushed pretzels. Spread evenly over the bottom of the prepared pan.
Bake in preheated oven for 25 minutes, or until center is set and golden brown. Allow to cool before serving. Enjoy!
Notes
Feel free to use a different type of pretzel for a unique flavor.
If you like your cheesecakes sweeter, you can add more sugar to the filling.
You may need to increase cooking time if the center isn't set after 25 minutes.
Serve with fresh fruit or whipped cream for a delicious finish!
