Ingredients
  

  • 1 pound cod fillets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup brown sugar
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme

Instructions
 

  • Preheat your smoker to 225 degrees F.
  • Rub the cod fillets with olive oil, then season with salt and pepper.
  • In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, oregano, and thyme.
  • Rub the spice mixture all over the cod fillets.
  • Place the cod on the smoker and smoke for about 2 hours, or until the fish is cooked through.
