Ingredients
  

  • 1 9 inch pie crust
  • 2 cups fresh cherries pitted
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon freshly squeezed lemon juice
  • 1 tablespoon butter
  • Egg Wash: 1 egg beaten with 1 tablespoon milk or cream
  • Optional: 1/4 cup all-purpose flour for dusting

Instructions
 

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the cherries, sugar, cornstarch, salt, and lemon juice. Mix well and pour into the pie crust. Dot with butter.
  • Brush the edge of the pie crust with the egg wash. Place the pie on a baking sheet and bake for 45 minutes to 1 hour, or until the filling is bubbly and the crust is golden brown.
  • Remove from oven and cool on a wire rack. Serve at room temperature or chilled.
