Egg Wash: 1 egg beaten with 1 tablespoon milk or cream
Optional: 1/4 cup all-purpose flourfor dusting
Instructions
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, combine the cherries, sugar, cornstarch, salt, and lemon juice. Mix well and pour into the pie crust. Dot with butter.
Brush the edge of the pie crust with the egg wash. Place the pie on a baking sheet and bake for 45 minutes to 1 hour, or until the filling is bubbly and the crust is golden brown.
Remove from oven and cool on a wire rack. Serve at room temperature or chilled.
