Equipment

  • a 12 cup muffin tin
  • grease and flour for the tin
  • A mixing bowl
  • a sifter or strainer
  • a spoon or spatula for stirring
  • measuring cups and spoons

Ingredients
  

  • 1 cup of all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons of unsalted butter at room temperature
  • 3/4 cup of sugar
  • 2 large eggs beaten
  • 1/2 cup of milk
  • 1 teaspoon vanilla extract
  • 1 cup of fresh or frozen blueberries

Instructions
 

  • Set oven to 350 degrees Fahrenheit (175 degrees C). A 12 cup muffin tray should be greased and floured, or paper liners can be used.
  • Sift together the flour, baking powder, and salt. Set aside.
  • Cream the butter and sugar in a big bowl until they are light and creamy. One at a time, beat in the eggs; next, whisk in the milk and vanilla. Just until mixed, add the flour mixture to the wet ingredients. Fold the blueberries in slowly.
  • Scoop the batter into the muffin tins as they are ready. A toothpick or cake tester placed into the center of a muffin should come out clean after 25 minutes of baking in a preheated oven.
  • Let cool in the tin for 5 minutes before removing to a wire rack to cool completely. Serve warm or cold. Enjoy!

Notes

This recipe can also be made with other fruit such as raspberries, blackberries, or strawberries. Simply substitute the fruit for the blueberries in the recipe. You can also use a mixture of fruits if you'd like. Get creative and have fun with it!
