Ingredients
1poundchicken piecesbreasts, thighs, drumsticks or a combination
1cupall-purpose flour
2eggsbeaten
Vegetable oilfor frying
Salt and pepper
Instructions
Place the chicken pieces in a large bowl. In a separate bowl, whisk together the flour, eggs, and 1 tablespoon of water to make a batter.
Pour the vegetable oil into a large skillet or Dutch oven and heat over medium-high heat. When the oil is hot, add the chicken pieces to the batter and coat evenly. Carefully place the coated chicken pieces in the hot oil and fry for 3 to 5 minutes per side, or until golden brown and cooked through.
Remove the chicken from the oil and drain on a paper towel-lined plate. Season with salt and pepper, to taste. Serve hot with your favorite dipping sauce. Enjoy!
