Ingredients
  

  • 1 1/2 cups white rice cooked
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 4 eggs beaten
  • 1/4 cup butter melted
  • 1 cup grated cheddar cheese
  • 1 cup heavy cream

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking dish.
  • In a large bowl, combine cooked rice, coconut milk, sugar, baking powder, eggs, and melted butter. Mix well. Stir in grated cheddar cheese and heavy cream. Pour into prepared pan.
  • Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
  • Cut into squares and serve with butter and sugar on top. Enjoy!
